This course is for students who want to work in a commercial kitchen. Students will acquire the skills and knowledge needed for fundamental cookery duties. They will develop a range of specialised kitchen skills in the preparation, cooking and service of foods and learn how to work as part of a team in a hospitality operation. Emphasis is placed on the practical application of cookery principles, implementation of food safety procedures and the presentation of foods for a range of hospitality establishments.

This college is located on Blaxland Road, 15 minutes walk from West Ryde Train Station. This specialist training centre is for hospitality, tourism, horticulture and environmental management. Hospitality students train in commercially equipped kitchens, bars, restaurants, and a 24-bedroom international standard hotel incorporating conference and convention facilities. Facilities linked to training for the horticulture industry include computerised glasshouses, landscape design studios, a cricket pitch, golfing green, tennis court and a bowling green.
